I love eating a breakfast omelette about 3-4 times a week. Not only are egg omelette a good source of healthy nutrients, but you can make them even more nutritious by adding ingredients. Omelette are an excellent source of protein, vitamins, and minerals. They are also rich in iron and in B vitamins. Now imagine how much more nutritious they are when you add ingredients to the mix!
Adding vegetables will add essential vitamins and minerals that will nourish our body. The vegetables will also increase the dietary fiber intake which helps us feel full after a meal. This in turn is an aide in weight-loss. My personal favorite ingredients to add are cilantro, spinach, jalapeño, avocado, red and green bell pepper, onion, and mozzarella cheese.
In my quest towards eating healthy, I have discovered many ways to make an omelette, but I will almost always include avocado in it. Not only do I love avocados for their delicious taste, but did you know they are one of the most nutritious fruits? Avocados regulate blood sugar, contribute to a healthy heart, aid in weight-loss, boost your immune system and so much more.
Let me share my most common omelette with you:
Avocado and Cilantro Omelette
My favorite is a Mexican flavored omelette. All I do is add cilantro and jalapeño. Then I also add spinach, sea-salt, and of course the avocado. The jalapeño gives it the perfect amount of spice for my spice loving taste buds and the cilantro gives it the perfect flavor of a common Mexican herb (I put cilantro in everything!). The spinach is added for the extra protein and fiber intake.
2 large, free-range organic brown eggs
10 spinach leaves (about)
1/2 or 1 jalapeño
1/2 medium avocado
tbsp olive oil
1. Chop the jalapeño, cilantro, and spinach into small pieces
2. Crack the eggs into a bowl, add the chopped vegetables and sea salt, beat together
3. Pour the mix onto a heated skillet that has olive oil and cover with lid (cook one side for about 2-3 minutes then turn for another 2-3)
4. When done, place on plate and add the sliced avocado to the omelette, enjoy!
Can you believe this simple breakfast has 2 servings of vegetables and 1 serving of fruit!? Talk about nutritious!
There are so many ingredients you can add to an omelette. By mixing it up you will never get bored with eating them. The amount of nutrients packed into an omelette is the best part.
